Timeless Style: Cosme, Contemporary Mexican cuisine arrives in NYC

I am eagerly awaiting the opening of Cosme, from the highly regarded Mexican chef, Enrique Olvera.  I had dinner at Pujol, his restaurant in Mexico City and was enthralled.  It’s much easier to crash and burn than have a successful restaurant succeed in NYC and to ensure that doesn’t happen to him, Enrique has been doing his due diligence visiting and studying the city’s most popular restaurants and seeking advice from the chefs, before embarking on his venture.

At 38, Mr. Olvera ranks as one of the world’s most respected kitchen auteurs. Contemporaries like René Redzepi, of Noma in Copenhagen, have praised the simultaneously trailblazing and unfussy cooking at Pujol, Mr. Olvera’s flagship in Mexico City, as a revolutionary approach to thinking about food.
